Infusing Plum Liquor Of Post-Chingming Festival｜清明後の梅酒

In Ep2 we are making Plum liquor(aka Umeshu) after Chingming festival. It is the season that all the lives revive and the plums get mature. The making is SUPER EASY and you will get a tank of plum liquor for you to drink all year around after 1 year when it’s done. It’s also a very nice gift when bottled in a nice glass jar. (What we always do when visiting friends :P)

Recipe:

Green Plum　900g

Crystal Sugar　360g

MichiuTou(米酒頭), a drier version of Michiu(distilled rice wine) with about 34%　1200ml

Making:

1. Wash the plums and dry completely (can use a fan to help drying)

2. Use a needle to pick out the sticks on the plums

3. Confirm the plums are dried without any water before adding sugar to the jar

4. Add in liquor and put on the lid

5. Open the jar once in a while during the infusing to improve the oxidation which helps the taste of plum infused better with the liquor and sugar. Drink after 1 year.

第二話は梅酒の作り方です。

台湾で梅酒を作る季節は4月の頭にある清明節(4月4日～6日の間)の直後になります。清明は二十四節気の一つであり、「清浄明潔」の省略で、万物が汚れなく生き生きする時期です。花が咲き、鳥は歌い、空は青く澄み、爽やかな風が吹き、春の息吹を感じます。日本の梅酒作りは5月らしいですが、台湾では4月の頭に梅酒を作らないと梅が完熟になってしまい、漬け込み酒ができなくなると言われています。作り方はすごく簡単ですぐにできます。失敗率０の方法で一年中通して美味しい梅酒が飲めるわけです。また可愛いガラス瓶に入れてお土産としてもいい感じです。

レシピ：

青梅　900グラム

氷砂糖　360グラム

お酒(34％)　1200グラム

作り方：

1. 梅を綺麗に洗い、水をきる

2. 針で果実の茎を綺麗にとる

3. 周りに水が残っていないのを確認し、瓶に氷砂糖と梅を入れる

4. お酒を入れ、蓋を閉める

5. 漬け込みの間に時に蓋をあけ、空気に触れるように味がより出る。そして一年待ってから飲めるようになる。
