This tea is made with 冬片 /dʊŋ piːɛn/, a tea leaf characterized by high quality but low yield, which refers to the tea leaves that continue to grow after the winter tea harvest. During this period, the tea trees should enter the dormant stage. However, when the weather briefly warms up again, the tea trees mistakenly believe that winter has passed and begun to grow. It has a pleasant and sweet taste, accompanied by the unique cool aroma of winter, making it refreshing and enjoyable. This tea cannot be produced every year. The variety called Jhinshuan is operated by the Taiwanese government and was developed over several decades of research by the Tea Research and Extension Station (TRES), which was established under the former Forestry Bureau and is now part of the Council of Agriculture. It is a popular variety known for its strong growth and its milky and buttery aroma. When cooled and consumed, it also has the scent of osmanthus flowers, further showcasing the excellence of Taiwanese tea. The tea is produced in Alishan, at an altitude of 1000 meters, where the year-round temperature is low, resulting in a concentrated flavor. It is lightly fermented and lightly roasted, allowing the true taste of the tea to be enjoyed. The fragrance of the Jhinshuan variety and the distinctive astringency of 冬片 are combined to create a smooth and delicious tea.
